No-Cook Strawberry Ice Cream Recipe

I always associate this time of year with fresh fruit, and strawberries in particular are one of my summer favourites. They are an excellent source of vitamins and other nutrients so I like to use them in my recipes as much as possible. 

Over the past few weeks I've been sharing some of those recipes with you and this is the final instalment. As I've previously mentioned, I'm no baking goddess so the recipes aren't too complicated and hopefully they've inspired you to try some out for yourself!

Today I'm sharing my no-cook strawberry ice cream recipe:


1 (397g) can of sweetened condensed milk
1 (170g) can of evaporated milk
2 tbsps of sugar
1½ cups of whole milk
1 container of fresh strawberries
2 tbsps of lemon juice
¼ tsp of salt

1. Whisk the condensed milk, evaporated milk, sugar and milk in a large bowl until blended. Cover and chill in the fridge for 30 minutes.

2. Process the strawberries, lemon juice and salt in a blender until smooth.

I used Jubilee Strawberries for this recipe because they are so yummy and sweet, they also have a wonderful fresh aroma which fills the kitchen whenever you're using them. If you're looking for a top quality strawberry then I'd definitely recommend the Jubilee range.

3. Stir the strawberry mixture into the milk mixture.

4. Pour the mixture into the container of your electric ice cream maker and use according to the manufacturers instructions (times will vary depending on your machine).

5. Once the mixture has been sufficiently churned, transfer the ice cream to an airtight container and freeze until firm.

If the ice cream is too hard when you remove it from the freezer, just leave it out for a few minutes to allow it to soften.

This ice cream is super creamy and tasty, it never lasts long in our household. Also, if you replace the strawberries and lemon juice with chocolate chunks and chocolate sauce you get an amazingly creamy chocolate ice cream - another favourite of ours!
