Strawberry And Lime Juice

I always associate this time of year with fresh fruit, and strawberries in particular are one of my summer favourites. They are an excellent source of vitamins and other nutrients so I like to use them in my recipes as much as possible. 

Over the coming weeks I'm going to be sharing some of those recipes with you. As I've previously mentioned I'm no baking goddess, so the recipes won't be too complicated and hopefully they may inspire you to try some out for yourself!

Today I'm sharing my simple but tasty strawberry and lime juice recipe:
 
Ingredients

3 cups of sliced fresh strawberries
1 cup of sugar
4 cups of cold water
⅔ of a cup of fresh lime juice (approx 4 limes)

I used Jubilee Strawberries for this recipe because they are so yummy and sweet, they also have a wonderful fresh aroma which fills the kitchen whenever you're using them. If you're looking for a top quality strawberry then I'd definitely recommend the Jubilee range.

Method

1. Stir together the strawberries and sugar in a large bowl.

2. Crush the strawberries with a wooden spoon and let them stand at room temperature for about 30 minutes.

3. Process the strawberry mixture in a blender until smooth.

4. Press the mixture through a wire mesh strainer into a large jug, using the back of a spoon to squeeze the juice out. Discard the solids.

5. Add the cold water and lime juice to the mixture, stirring until blended. Cover and chill for 2 to 24 hours (I usually leave it overnight).

6. Serve. You may need to give it another stir before pouring the juice into your glasses.

For me, this drink is the taste of summer - it's fruity and so refreshing on a hot day!
